We'll begin with the whys, and then move on to the hows — including tips to do this safely.  Oh, and for you ambitious fellas who stop reading before the safety tips: Use your head, we're setting things on fire here. Highlights

Burning alcohol will lower the liquid content of the drink, condensing the flavors to make the drink's taste richer and deeper. In the recipe for a Flaming Doctor Pepper discussed below, the burning caramelizes the taste of the amaretto, and gives the drink its signature flavor.
